Morels( Morchella esculenta)

Habitat:

Found on waste ground, along path edges, open woodland, and disused railway lines are a good place to look.

Season:

Spring time.

Cooking and preparation:

Always cook morels,under no circumstances should this fungi be eaten raw.

Best dried as the flavour increses with time but they must be cleaned thoroughly first, as they are often infested with woodlice. The cap and stalk are hollow, so to make sure it is clear of insects slice in two, can be rinsed in water and dried. Makes a very delightful rich sauce that goes with any meat dish.
