(Auricularia auricula-judae)
Habitat:
Grows on a veriety of trees, particularly Elder. Gets its name from Judas (judae) who it is said hanged himself on an Elder tree.
Season:
All year round.
Preperation and Cooking:
Because of the gelutinous texture it needs several thorough washes. Fry them well in onions, garlic and a little basil once cooked add some cream serve on freshly buttered toast.
