Cauliflower (Sparassis crispa )

Habitat:

Grows on Pine Tree roots, has been found on Oak. It is pale creamy-white to pale yellow in colour, if it looks pinkish it is the sub-species Sparassis vipes , which is very rare so please do not pick it.

Season:

From late Summer until the first frost.

Cooking and preparation:

It is at its very best when creamy white in colour. It needs care when cleaning as it is very fragile with lots of nooks and crannies, avoid cleaning in water. Cut into thin slices and clean each side thoroughly, they are delicious dipped in batter and deep fried, which makes a excelent starter to any meal, a good accompliment to any stew or casserole.
